Ideal® Fall Foliage Pumpkin Bread


Servings: 1 loaf

Ingredients

1 1/2 c all purpose flour
1/2 tsp salt
1 c Ideal® No Calorie Sweetener
1 tsp baking soda
1 c pumpkin puree
1/2 c vegetable oil
2 large eggs, beaten
1/4 c water
1 tsp allspice
1 tsp pumpkin pie spice
1/2 c chopped walnuts

Directions

1.   Preheat oven to 350° F
2.  Combine flour, salt, Ideal® No Calorie Sweetener, and baking soda in a large bowl
3.   In a separate bowl mix pumpkin, oil, eggs, water and spices
4.  Combine dry and wet ingredients; mix until just combined
5.  Fold in walnuts
6.  Spread into greased loaf pan & bake for 50 to 60 minutes or until toothpick is clean
7.  Remove from oven, turn out and let cool

Per Serving: 220 Calories; 4 g Protein; 13 g Total Fat; 23 g Carbohydrates; 3 g Fiber; 0 g Sugar; 260 mg Sodium; 35 mg Cholesterol

Ideal® Banana Bread

Servings: 1 loaf/12 slices

Ingredients

1 c Ideal® No Calorie Sweetener
¼ lb butter softened
2 eggs
1 ½ c all purpose flour
1 tsp baking soda
1 tsp salt
1 c mashed very ripe bananas
½ c sour cream
1 tsp pure vanilla extract
½ c chopped walnuts or pecans

Directions

1.  Preheat oven to 350 °F
2.  Butter and flour a 9” x 5” loaf pan
3.   Cream butter and Ideal® No Calorie Sweetener until creamy
4.   Add eggs and beat well
5.   Sift the dry ingredients together and combine with butter mixture; blend well
6.   Add the bananas, sour cream and vanilla; stir well
7.   Stir in nuts and pour into prepared pan
8.   Bake 1 hr until cake tester comes out clean
9.   Turn onto rack and cool
