Ingredients

3 fresh lemons
6 packs Ideal® No Calorie Sweetener
2 c water
Ice

Directions

1.   Juice 2 lemons into 1 qt jar
2.  Cut 3rd lemon into quarters and squeeze juice into jar; drop lemon quarters into jar
3.   Add Ideal® and water to jar, seal and shake to dissolve sweetener
4.  Pour into 2 tall glasses over ice; garnish with lemon slice, if desired

1 c low fat milk
2 packets Ideal® No Calorie Sweetener
2 TBS unsweetened cocoa powder

Directions

1.  Place ingredients into a small saucepan and heat to a simmer over medium heat
2.  Pour into a tall mug and top with miniature marshmallows or fresh whipped cream

Eggnog


Servings: 8

Ingredients

6 c nonfat milk
1-12 oz can evaporated skim milk
1 c Ideal® No Calorie Sweetener
1 tsp ground nutmeg
1 ¼ c egg substitute
2 TBS pure vanilla extract
1 c dark rum or 1 TBS rum flavoring

Directions

1.   Whisk together the nonfat milk, evaporated milk, Ideal® No Calorie Sweetener, nutmeg, and egg substitute in heavy saucepan
2.  Warm over very low heat, stirring constantly until the mixture reaches 160° F (70° C) about 10 min
3.   Pour eggnog through a strainer, stir in vanilla and refrigerate until chilled about three hrs
4.  Just before serving, stir in rum or rum flavor

Tips: You can use almond or soymilk as well as pumpkin spice for a tasteful twist on this traditional holiday beverage.

Ingredients

2 TBS lime juice
8 mint leaves
2 TBS Ideal® No Calorie Sweetener
  (or three Ideal® packets)
1 ½ oz white rum
2 oz club soda
Cubed ice
1 lime wedge for garnish
1 sprig mint for garnish

Directions

1.   Place mint, lime juice, and Ideal® in large tumbler
2.  Crush ingredients using muddling stick or spoon, until mint and sweetener are dissolved
3.   Fill glass ¾ from the top with ice; add rum and top with club soda

Tips: Great with muddled pomegranate seeds and juice.

Holiday Cappuccino

Ingredients

1 ½ c espresso beans
3 c boiling water
2 TBS Ideal® No Calorie Sweetener
1 tsp ground cinnamon
1 vanilla bean split
4 c non-fat milk
4 oz bittersweet chocolate, chopped


Directions

1.   In a coffee mill, finely grind the beans; then brew espresso with the boiling water using coffee maker
2.  In a small bowl, combine Ideal® No Calorie Sweetener and cinnamon and set aside
3.   Using a small knife, scrape the seeds from the vanilla bean into medium saucepan; pour in the milk and scald over medium heat about 5 min
4.  Remove from heat, add chocolate and stir until melted; cover and keep warm over very low heat
5.   Divide the espresso into four cups, mugs, or glasses; in a blender begin whipping half of the warm chocolate milk at low speed; gradually increase the speed to high and blend until frothy, about 1 min
6.   Pour the chocolate milk into cups of coffee; stir briefly; top each cup with some milk froth and sprinkle top with reserved cinnamon sweetener
7.   Top with Ideal® whipped cream if desired (see below for recipe)

Tip: Can use almond or soymilk as well as pumpkin spice for some delicious variety.

1 bunch fresh mint, trimmed (about 1 c)
½ c Ideal® No Calorie Sweetener
1 ¾ c light rum
1 ¼ c fresh lime juice
¾ c frozen cranberry juice cocktail concentrate, thawed
2-10 oz bottles sparkling water, chilled

Directions

1.   Using a wooden spoon, mash mint with Ideal® in bottom of large pitcher; add rum and lime juice, stir to dissolve Ideal®
2.   Mix in thawed cranberry juice concentrate and water; mix in 6 c ice
3.   Pour into glasses and garnish with mint sprig and lime wedge
